In the last two weeks, Moon’s preschool has gone from a no-allergies class to all snacks needing to be gluten-free (a protein found in wheat — makes bread chewy and delicious) and dairy-free as well. Given how hard coming up with snack ideas has seemed, I can’t imagine what it’s like for the parents in these families who are looking at every meal from here on out. With gluten free I had some advantage, in that my sister was diagnosed with a gluten allergy a couple of years ago so I have been learning what works for her. But finding foods that are both gluten free and vegan was a challenge. While baking them ourselves would be an option, to conform with school food guidelines, we would have to bake the cupcakes in the school kitchen to avoid cross-contamination. So, the search was on.

While PCC keeps a variety of vegan cakes on hand, they don’t have cakes that are both gluten free and vegan. They also have muffins that are gluten free, but no cakes.

A call to Whole Foods revealed the same — while they have a wide variety of gluten free foods in a freezer case, they don’t have a gluten free bakery on-site.

Enter the Flying Apron Bakery in Fremont. They’re baked goods are both vegan and gluten free, and include everything from cakes and cookies to more healthy scones and lunch-foods.

We ordered cupcakes for Moon’s “VIP Day” at school; they look beautiful, and smell a bit of chickpeas (I’m guessing Gluten-free chickpea flour is the culprit here). I’ll let you know how they go down at preschool today.

Verdict is, kids were happy and icing smeared. Grown ups noticed the texture difference, but still ate cakes.
